BUFFALO WINGS!!! Have you ever tried our smoked and fried WHOLE chicken wings?! If you haven’t, you are missing out! We start by marinating whole jumbo chicken wings overnight in a secret sauce, then we smoke them over oak wood for 3-4 hours, and finally flash fry them to order and toss in one of two signature homemade sauces. Our two everyday signature sauces are an Asian BBQ and a Spicy Asian Buffalo, but we have crafted a special traditional Buffalo sauce with just the right amount of fire that will be available for a limited time at the restaurant. We will have BURNT ENDS on special tonight! We smoke the brisket point, then chop, then toss in specialty sweet BBQ sauce, then smoke again to produce the caramelized morsels of meat candy. Here is a picture after the first smoke right before they go back in the smoker for the second session. Burnt ends offered two ways: as a sandwich, dressed simply with house made dill pickles and diced white onion; or on their own as a 1/2 lb plate with two sides and a homemade buttermilk biscuit. TRIPLE THREAT SPECIAL ALERT!!! We will be featuring three specials while supplies last. 1. Loaded Potato and Sausage Soup (pictured) - house-smoked sausage and potatoes in a rich cream broth, topped with bacon, cheddar cheese, and scallions. 2. Brisket Philly - We have had this for the past few days and it has been a huge hit! Slow smoked brisket, peppers, onions, and mushrooms, topped with our smoked poblano cheese sauce. 3. BURNT ENDS - The real thing. Some folks slap some sauce on brisket and call it burnt ends. That is not burnt ends. We double-smoke the point of our brisket in an extra sweet barbecue sauce until the perfect crispy, caramelized crust covers each and every morsel. We will be serving the burnt ends simply on a sandwich with our homemade pickles and sliced onion. We will confirm in the morning whether the burnt ends will be ready for lunch or for dinner so stay tuned! We love you deeply and passionately.

Did you know resting a brisket after it is finished cooking is a critical step for the meat to reach is maximum potential? Unlike a steak, which needs to rest about 10 minutes after cooking, a big cut like a brisket needs to rest at least an hour before slicing lest it lose all its magical juices to the cutting board.
